STRAVECCHIO DI MALGA cheese 🧀
The Malga Verde cheese selection is unmistakable: the cheeses made by the Cortese family are a beautiful expression of mountain pasture production which, in their case, takes place exclusively from June to mid-October on the Asiago Plateau.
"MOUNTAIN PRODUCT" what does it mean?
“Mountain Product” is the label reserved for cheeses made at an altitude of over 600 metres: milking, cheesemaking and ageing all take place in the mountains.
👉 It is NOT a lowland cheese.
The entire production chain follows strict production rules that carry on an ancient tradition, protecting the environment, the grazing cows and the consumer.
Milking, cheesemaking and ageing on spruce boards all take place in the mountains at an altitude of over 600 metres. Using only traceability-certified mountain milk guarantees the highest quality.
The unspoilt environment of the alpine pastures and a great dairy tradition make this cheese a precious gem of natural goodness.
👉 produced above 600 metres of altitude.
👉 different ageing, tastes and flavours from lowland cheeses
N.B.: Every box is shipped in insulated polystyrene packaging with gel ice packs, or by refrigerated delivery where the area is covered! The cheese is vacuum packed.
Stravecchio di Malga cheese is made on the Asiago Plateau at Malga Verde from partially skimmed milk and aged for more than 18 months.
- raw, partially skimmed cow’s milk from Brown Swiss and Friesian cows grazing on the Asiago Plateau
- Hard paste, deep straw colour, with scattered small to medium eyes
- thin rind tending towards brown
- ageing gives a rich, complex flavour, sweet and turning piquant on the finish, with hints of toasted hazelnut and ripe fruit.
- Intense aromas of herbs and moss
- mountain pasture product
- Aged at least 18 months (Slow Food Presidium)
Excellent with polenta or enjoyed on its own with a good red wine.
This cheese is a "Mountain Product" because it is made at an altitude of 1,100 m on the Asiago Plateau.
SLOW FOOD PRESIDIUM for stravecchio di malga.
👉 A cheese of intense character: on the nose freshly cut grass, ripe fruit and moss; on the palate an initial sweetness that gives way to bolder notes of hazelnut and toasted bread.
👉 The paste is grainy and crumbly, with scattered medium-sized eyes. Its unique flavour comes from at least eighteen months of ageing and the patient work of the mountain cheesemakers. The best production takes place in the summer months, from June to September, and is limited to the historic municipalities of the Plateau.
That is why stravecchio di malga is a Slow Food Presidium: protecting the mountain pasture dairies of the Asiago Plateau of the Seven Municipalities means supporting the cheesemakers who keep the area’s dairy tradition alive. Clear rules serve both to showcase this cheese and to encourage its production.
At the table it pairs well with typical products of the Plateau, such as mostarda and sopressa. It is also a special ingredient for rich first courses and a real treat enjoyed on its own.
